Macaroon Granola
- 8 cups Old Fashioned Oats
- 1 cup Wheat Germ
- 1 cup Ground Or Whole Flaxseeds
- 3 cups Shredded Coconut
- 2 cups Chopped Almonds
- 1 teaspoon Salt
- 1-1/2 cup Honey
- 1 Tablespoon Coconut Extract
- 1 Tablespoon Vanilla
- 1/2 cups Coconut Milk, Unsweetened
- 1 cup Coconut Oil, Melted (I Just Microwaved My Solid Oil Till Melted)
- 3/4 cups Brown Sugar
- 3 cups Chopped Dark Chocolate Or Chips
- Combine all of the dry ingredients (oats through salt on the above list) in a large bowl and mix.
- In a smaller bowl combine all the liquid ingredients plus the brown sugar and then dump this mixture over the oat mixture. Mix well then spread out on a large greased cookie sheet and bake at 300 degrees F for about 45 minutes, stirring at least twice throughout the cooking process.
- Take it out of the oven and let it rest on the pan for 30 minutes then transfer to a large bowl and let cool completely then add the dark chocolate and stir.
- Store in an airtight container.
