Makeover Mint Brownie Pie
- FOR THE BROWNIE BASE:
- 6 Tablespoons Butter
- 2 ounces, weight Semi-sweet Chocolate
- 1/2 cups Sugar
- 2 Eggs, Lightly Beaten
- 1 teaspoon Vanilla Extract
- 1/2 cups All-purpose Flour
- FOR THE CREAM CHEESE FILLING:
- 8 ounces, weight 1/3 Less Fat Cream Cheese
- 1/2 cups Sugar
- 1/2 teaspoons Peppermint Extract
- Green Food Coloring
- 8 ounces, weight Fat-Free Frozen Whipped Topping, Thawed
- Mint And Dark Chocolate Chips, Optional
- 1. Preheat oven to 350u0b0F.
- 2. For the brownie base, in a large saucepan, melt butter and chocolate over low heat. Stir in sugar until smooth.
- 3. Mix in eggs and vanilla until well-blended. Stir in flour until combined.
- 4. Pour into a greased 9-inch spring form pan. Bake for 18-20 or until a toothpick inserted in center comes out clean.
- 5. Cool on wire rack.
- 6. While brownie base is cooling, prepare filling. Beat together cream cheese and sugar until smooth.
- 7. Beat in extract and food coloring. Fold in whipped topping.
- 8. Spread evenly over brownie. Sprinkle with chips. Cover and refrigerate for at least 1 hour before serving.
- 9. Remove sides of pan right before serving.
