Grandma’S Zucchini Bread
- 1 cup Sugar
- 1/2 cups Vegetable Oil
- 2 whole Eggs
- 1 teaspoon Grated Lemon Peel
- 3 Tablespoons Fresh-squeezed Orange Juice (approx. 1/2 Orange) Or 1/2 Teaspoon Orange Extract
- 1-1/2 cup Flour
- 1/2 teaspoons Salt
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Nutmeg
- 1/4 teaspoons Ground Ginger
- 1/4 teaspoons Cinnamon
- 2 teaspoons Baking Powder
- 1-1/2 cup Grated Unpeeled Zucchini
- 1/2 cups Chopped Pecans
- Preheat oven to 375u0b0F.
- Beat sugar, oil, egg, lemon peel, and orange juice or extract until well blended. Add the sifted dry ingredients and zucchini alternately and mix well. Stir in nuts. Pour into a greased loaf pan. Bake for 55 minutes.
