Peanut Butter And Chocolate Chips Pancakes
- 1/2 cups Oatmeal Flour
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1 Egg
- 2 Tablespoons Organic Peanut Butter
- 1/2 cups Coconut Milk
- 1/2 teaspoons Vanilla Extract
- 3 Tablespoons Dark Chocolate Chips
- Cooking Spray
- Preheat a large skillet or a pancake pan over medium heat and coat with cooking spray.
- In a bowl, combine the dry ingredients together: oatmeal flour, baking powder and salt.
- In another bowl, beat egg, peanut butter, coconut milk, and vanilla extract together. Pour the dry ingredients into the wet ingredients. Mix everything together. Add the chocolates chips.
- Use a ladle to spoon batter onto the skillet, leaving space between each pancake. Cook for two minutes on each side or until bubbles start to appear and they are golden brown. Remove cooked pancakes to a plate and finish cooking the rest.
- Serve warm and top with pure Canadian maple syrup and blueberries.
