Peanut Butter Nutella Sandwich Cookies

  1. Preheat the oven to 350 F.
  2. In a large bowl cream together the peanut butter, butter, brown sugar and white sugar. Beat in the egg and vanilla.
  3. In a small bowl mix together your flour, baking soda, baking powder, and salt. Mix the dry ingredients into the creamed butter and sugar mixture.
  4. Drop teaspoonfuls (or use a small cookie scoop) of dough onto a parchment lined baking sheet. Make a criss cross on top of each with a fork to flatten the cookies.
  5. Bake for 10 minutes then remove the pan from the oven and allow cookies to cool.
  6. When cookies are completely cooled, flip half of them over. Spread the bottom of those cookies with a spoonful of Nutella, using as much as ya like. Then top the Nutella covered cookies with the remaining cookies (sandwich style).
  7. *Slightly adapted from buns in my oven.
