Crabmeat Pie
- 2 (8 or 9-inch) pie shells (do not use deep dish shells)
- 1 lb. crabmeat
- 1 (6 or 8 oz.) bulk Swiss cheese, cubed (save 1/3 to be grated on top of pies)
- 1/2 c. chopped green onions
- 1/2 c. chopped celery
- 3/4 c. mayonnaise
- 1 slightly beaten egg
- 1 1/2 packs crushed saltines or Hi Ho crackers
- 1 Tbsp. seafood seasoning
- 1 tsp. dry mustard or prepared mustard
- 1 can cream of mushroom soup or cream of shrimp soup
- 1 small can sliced mushrooms, drained
- 1 Tbsp. Worcestershire sauce
- crushed red peppers or flaked red peppers to taste
- 1/2 tsp. black pepper
- Mix all ingredients together in a bowl, reserving the grated cheese.
- If mixture seems too thick, add a little milk.
- Pour into pie shells; sprinkle grated cheese on top of pies.
- Finally, sprinkle paprika on top.
- Bake at 350u0b0 in preheated oven for approximately 45 to 50 minutes.
- Let stand at room temperature for about 30 to 40 minutes before cutting.
