Peachy Pancakes

  1. Mix together the pancake mix, eggs, vegetable oil, sugar, and vanilla with 2 cups water. Stir in the peach preserves.
  2. Pit and slice the peaches, then dice half of them. Stir in the diced peaches, reserving the slices for serving.
  3. Heat a skillet over medium low heat and fry in butter until done on both sides. Serve with a little peach preserves, butter, and syrup.
