Honey Blueberry Bread
- 3 c. sifted flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 c. sugar
- 1 Tbsp. instant coffee powder
- grated rind of 1 lemon
- 2 c. frozen dry pack blueberries or 2 c. fresh, rinsed and drained
- 1/3 c. shortening
- 2 eggs
- 1/2 c. honey
- 1/2 c. water
- 1/2 c. chopped nuts
- Combine first 5 ingredients.
- Cut in shortening (like coarse cornmeal).
- Mix eggs, honey, water, coffee and lemon rind.
- Add mixture to dry ingredients all at once.
- Stir until just blended. Fold in nuts and berries.
- Pour into well-greased 9 x 5 x 3-inch loaf pans (2 pans).
- Bake at 350u0b0 for about 55 to 65 minutes until well browned and firm to touch.
