Southern Fried Rice
- 1/2 whole Onion, Chopped
- 1 Tablespoon Olive Oil
- 1 can (15 Oz. Size) Black-eyed Peas, Rinsed And Drained
- 1 cup Frozen Corn
- 1/2 teaspoons Thyme
- 1 teaspoon Minced Garlic
- 1/2 teaspoons Salt
- 1/4 teaspoons Cayenne Pepper
- 3 Tablespoons Chicken Broth
- 2 cups Fresh Spinach
- 1 cup Cold, Cooked Rice
- In a large nonstick skillet over medium heat, saute onion in oil until tender. Add the black-eyed peas, corn, thyme, garlic, salt and cayenne. Cook and stir over medium heat for 1 minute. Add broth then cook and stir for 1 minute. Add spinach and rice. Cook and stir until spinach is wilted. Serve!
