Banana Chocolate Chip Bread With Chocolate Glaze
- FOR THE BREAD:
- 1-1/2 cup All-purpose Flour
- 3/4 cups Sugar
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Semisweet Chocolate Chips
- 1/2 cups Toasted, Chopped Almonds, Or Nuts Of Choice
- 1/2 teaspoons Orange Rind
- 2 Large Eggs
- 1 stick Unsalted Butter, Melted And Cooled
- 1/4 cups Plain Yogurt
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Mashed Bananas
- FOR THE CHOCOLATE GLAZE:
- 1 cup Powdered Sugar
- 3 Tablespoons Cocoa Powder
- 3 Tablespoons Milk
- 1/2 teaspoons Vanilla Extract
- For the Banana Chocolate Chip Bread:
- Preheat oven to 350 F.
- Butter and flour one 9X5-inch loaf pan. Set the pan aside.
- Sift flour, sugar, baking powder, baking soda and salt into a large bowl. Put your chocolate chips, nuts and orange rind into the flour mixture, and stir to combine.
- Crack the eggs into a medium sized bowl. Using an electric mixer, beat eggs until smooth. Add in butter yogurt and vanilla and blend well. Fold in the bananas. Stir to incorporate.
- Next fold the wet mixture into your dry mixture and stir to combine, but don't over stir.
- Spread the batter into the prepared loaf pan. Bake for 50 minutes to an hour, until a toothpick inserted into the center pulls clean.
- Cool completely ... If you can wait that long. Once cooled, turn bread out onto a rack (it might be a good idea to put a piece of parchment paper under the rack). Now onto the glaze.
- For the glaze:
- Whisk all of the glaze ingredients together to combine well. Pour over the loaf and let it set.
- Or you could set the glaze aside and each time you cut a slice, heat some of the glaze and spoon it over the serving.
