Baked Elvis Oatmeal

  1. Preheat oven to 350 F. Lightly spray a small baking dish (I used a 4x6 rectangle) with non-stick cooking spray.
  2. Stir together oats, salt, cinnamon and chia seeds. Set aside.
  3. Combine peanut butter, milk, honey and vanilla in a medium bowl and mix until combined. Add the dry ingredients and the banana and stir until fully incorporated.
  4. Pour into the prepared baking dish and bake for 12-14 minutes. The edges will be lightly browned.

  6. If you don't have chia seeds, flax seeds would be a great addition too, or you can leave them out altogether.
