Peach & Maple Superfood Granola
- 4 cups Rolled Oats
- 1 cup Walnut Pieces
- 1/2 cups Pepitas
- 1 cup Unsweetened Dried Peaches
- 2 Tablespoons Chia Seeds
- 1/2 teaspoons Fine Sea Salt
- 1/3 cups Coconut Oil
- 1/2 cups Maple Syrup
- 1/2 cups Goji Berries
- 1. Preheat oven to 300u0b0F.
- 2. Set out 2 baking sheets.
- 3. Place racks on bottom and top third of the oven.
- 4. Combine oats, walnuts, pepitas, peaches, chia seeds and salt in a large mixing bowl and set aside.
- 5. Heat the coconut oil in a saucepan on medium heat and add the maple syrup. Stir until just melted and blended.
- 6. Pour the melted coconut oil and maple mixture onto the oat mixture and stir to coat evenly.
- 7. Place half of the granola on each baking sheet and place in oven.
- 8. Stir a few times during the baking time and halfway through, rotate the pans.
- 9. Bake for approximately 45 minutes or unti granola looks golden.
- 10. Once cooled, stir in the goji berries.
