Black Forest Bread
- 1-3/4 c. all purpose flour
- 1/2 c. unsweetened cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. dried cranberries
- 1 Tbsp. hot water
- 2 tsp. instant coffee granules
- 3/4 c. buttermilk
- 2/3 c. sugar
- 1/3 c. honey
- 2 Tbsp. vegetable oil
- 2 tsp. vanilla extract
- 1 lg. egg
- Cooking spray
- Preheat oven to 350u0b0.
- In a large bowl, combine flour, cocoa, baking soda and salt.
- Stir in the cranberries.
- Make a well in the center of the mixture.
- In another bowl, combine the water and coffee granules, then add the buttermilk, sugar, honey, oil, vanilla and egg, stirring well with a whisk.
- Add to the flour mixture, stirring just until moist.
- Spoon the batter into a 8 x 4 inch loaf pan coated with cooking spray.
- Bake at 350u0b0 for 50 minutes or until a toothpick inserted in the center comes out clean.
- Cool on a rack for 10 minutes before removing the bread from the pan.
- Cool completely on a wire rack before slicing.
