Black Forest Bread

  1. Preheat oven to 350u0b0.
  2. In a large bowl, combine flour, cocoa, baking soda and salt.
  3. Stir in the cranberries.
  4. Make a well in the center of the mixture.
  5. In another bowl, combine the water and coffee granules, then add the buttermilk, sugar, honey, oil, vanilla and egg, stirring well with a whisk.
  6. Add to the flour mixture, stirring just until moist.
  7. Spoon the batter into a 8 x 4 inch loaf pan coated with cooking spray.
  8. Bake at 350u0b0 for 50 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool on a rack for 10 minutes before removing the bread from the pan.
  10. Cool completely on a wire rack before slicing.
