Mini Choc Chip Cookies
- 4-1/2 ounces, weight Plain Flour
- 1/2 teaspoons Baking Powder
- 1 pinch Salt
- 4-1/2 ounces, weight Butter
- 3-1/4 ounces, weight Dark Brown Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 3-1/4 ounces, weight Chocolate, Finely Chopped
- 1-7/8 ounces, weight Walnuts, Finely Chopped
- Preheat the oven to 180 C (350 F). Butter two baking sheets.
- Mix together the flour, baking powder and salt in a medium-sized bowl. In a separate bowl, beat the butter and sugar at high speed with an electric mixer until creamy. Add in the egg and the vanilla and beat until just combined.
- Mix in the dry ingredients. Then add the chocolate and nuts. Drop teaspoon-sized balls of mixture onto the baking sheets, leaving about 1 inch in between. Bake the cookies for about 10-12 minutes, until firm to touch and lightly golden. Transfer to wire racks to cool.
