Pita Bread

  1. Combine 2 cups flour, yeast,
  2. sugar
  3. and salt in a large mixing bowl.
  4. Stir in water
  5. and oil.
  6. Beat until smooth.
  7. Stir in enough remaining flour to make
  8. soft dough.
  9. Turn out onto a floured surface; continue to work in flour until dough is stiff enough to knead.
  10. Knead about
  11. 5 minutes.
  12. Place in oiled bowl, turn to oil top of dough.
  13. Cover,
  14. let
  15. rise
  16. in
  17. a
  18. warm place until double in bulk, about
  19. 45
  20. minutes.
  21. Punch down dough and divide into 12 to 16 equal
  22. parts.
  23. Roll into a ball.
  24. Let rest 5 minutes.
  25. Roll into
  26. 8-inch
  27. round
  28. 1/8-inch thick.
  29. Sprinkle baking sheets with cornmeal.
  30. Place

  32. baking sheets.
  33. Cover, let rise 30 minutes.
  34. Bake at 450u0b0 for 8 to 10 minutes or until puffed and brown.
  35. Cut in half.
