Marshmallow Whoopie Pies
- 1 cup Butter, Softened
- 1-1/2 cup Sugar
- 2 whole Eggs
- 2 teaspoons Vanilla Extract
- 4 cups All-purpose Flour
- 3/4 cups Baking Cocoa
- 2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 cup Water
- 1 cup Plain Greek Yogurt

- FOR THE FILLING:
- 2 cups Marshmallow Creme
- 2 cups Confectioners Sugar
- 1/2 cups Butter, Softened
- 2 teaspoons Vanilla Extract
- Preheat oven to 375u0b0F.
- In a large mixing bowl, cream butter and sugar until light and fluffy. Add the eggs and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with water and yogurt, beating well after each addition.
- Drop by teaspoonfuls 2 inches apart onto greased baking sheets. Bake for 5-7 minutes or until set. Remove to wire racks to cool completely.
- For the filling: In a small mixing bowl, beat filling ingredients until fluffy. Spread filling on the bottom of half of the cookies; top with remaining cookies.
