Hearty Veggie Soup – Perfect For Cold Winter Days!
- 1 Tablespoon Sunflower Oil
- 1 whole Big Onion, Diced
- Sea Salt And Pepper, To Taste
- 1 Tablespoon Dry Parsley
- 1 Tablespoon Dry Veggie Mix (You Can Use Any Healthy, Monoglutamate Free, Veggie Mix)
- 2 whole Carrots, Sliced
- 1/2 cups Celery Root, Diced
- 1 whole Red Bell Pepper, Diced
- 1/2 cups Green Peas
- 1 can (400g Size) Peeled, Chopped Tomatoes
- 6 cloves Garlic, Sliced
- 2 Tablespoons Celery Leaves, Chopped
- Fresh Parsley, For Garnish
- Heat the oil in a medium pot. Add diced onion and saute until golden.
- Fill 2/3 of the pot with water (about 6-8 cups of water). Add salt, pepper, dry parsley, and veggie mix.
- Add sliced carrots, diced celery root, red bell pepper and peas. Let it boil until all veggies are tender, about 1/2 hour.
- Add chopped tomatoes, sliced garlic and celery leaves. Let it boil for another 5 minutes.
- Serve with fresh parsley on top.
