Citrus Shortbread Cookies
- FOR THE COOKIES:
- 3/4 pounds Unsalted Butter
- 2/3 cups Sugar
- 2 Tablespoons Orange Zest
- 1 teaspoon Lemon Extract
- 2-1/3 cups Flour

- FOR THE GLAZE:
- 1/4 cups Melted Butter
- 2 cups Powdered Sugar
- 1/2 cups Fresh Orange Juice
- Cream together butter and sugar, orange zest and lemon extract. Then add the flour, 1/2 cup at a time. The cookie dough will become thicker and pull away from the sides of the bowl.
- Take the dough and place on a large piece of parchment paper or foil. Shape into a long log. Wrap firmly with the parchment paper to keep shape. Place in the freezer for 20 minutes to firm up.
- Unroll the dough and cut into 1/2-inch pieces and bake at 375F for 8-10 minutes. Cookies should be lightly golden when done. Do not over bake.
- While cookies are cooling, make the glaze.
- Combine melted butter, powdered sugar, and fresh orange juice and whisk until no lumps appear.
- Drizzle glaze on top of cooled cookies- and enjoy! These cookies are a hit every time!
