Chocolate-Cranberry Oat Bars

  1. Preheat oven to 350 degrees F.
  2. Combine cranberries and orange juice in a microwavable bowl. Microwave on high for 30 seconds. Let it stand for 10 minutes.
  3. Meanwhile in a seperate bowl, combine flour, oats, baking powder, and salt; set aside.
  4. Beat butter and sugar in a large mixing bowl on medium speed, until light and fluffy. Add eggs, one at a time, beating until well blended after each addition. Gradually add flour mixture, mixing well after each addition.
  5. Stir in cranberry mixture, chocolate, and pecans.
  6. Spread dough into a greased 13 x 9-inch baking pan. Bake 20-25 minutes, or until center is set. Cool completely on a wire rack before cutting.
