Dark Chocolate M&M Cookies

  1. 1. Preheat oven to 350u0b0F and line baking sheets with parchment paper or silicone mats. Set aside.
  2. 2. In a bowl of a stand mixer, cream together the sugars and butter until light and fluffy. Beat in the eggs.
  3. 3. In a large bowl, combine the flour, baking soda, baking powder, and salt. Add it to the mixer and blend until well-combined.
  4. 4. Remove the bowl from the stand mixer and gently stir in the oats and M&Ms by hand.
  5. 5. Take a medium-sized cookie scoop and scoop the dough into the palm of your hand and form a ball with it. Place it on the cookie sheet and, with your index finger, make a well in the middle of the dough. Take a teaspoon of peanut butter and put the dollop in the well. Then take another scoop of cookie dough and put it on top (like a sandwich). Repeat until all dough has been used up.
  6. 6. Bake for 15 minutes or until edges are starting to brown. Let cool on baking sheet for 5 minutes before transferring to cooling rack to cool completely.
  7. 7. Store in an airtight container.
