Lower Calorie Pecan Pie Muffin
- 1/3 cups Butter, Melted And Cooled
- 1 cup Pecan Halves
- 1/4 cups White Whole Wheat Flour
- 1/4 cups White Unbleached Flour
- 2/3 cups Packed Brown Sugar
- 2 whole Medium Eggs
- 1/3 cups Unsweetened Applesauce
- 1 teaspoon Pure Vanilla Extract
- Preheat oven to 375 F.
- Melt the butter in the microwave or in a saucepan over low heat. Once melted, remove it from the heat and allow it to cool while you start with the next steps.
- Chop pecans and mix them with the flours and sugar in a medium bowl. Set aside.
- In a medium sized bowl, beat eggs with a fork. Add applesauce, vanilla and cooled, melted butter and mix well. Add the wet ingredients into the dry ingredients and mix well.
- A non-stick pan needs no greasing, but use cupcake papers or grease a regular muffin tin well before dividing batter into 8 spaces. Fill each liner about 2/3 full. Bake in preheated oven at 375 F for 20 minutes.
