Fresh Arugula Salad

  1. Add fresh rucola and cherry tomatoes to a medium bowl.
  2. Cut the feta into cute, uneven chunks and toss them onto the array of healthy veggies.
  3. Combine olive oil, vinegar, sugar, salt, pepper, and pitted black olives in a bowl. Whisk together until combined. Taste and adjust seasonings.
  4. Pour dressing over salad ingredients. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top.
