Fresh Arugula Salad
- 1 bag (about 5 To 7 Oz.) Fresh Rucola, Or Any Other Greenery You Have
- 6 whole Cherry Tomatoes, Cut In Half
- 2 ounces, weight Feta Cheese
- 2 dashes Olive Oil
- 2 Tablespoons Red Wine Vinegar
- 1 teaspoon Sugar (more To Taste)
- 1/4 teaspoons Salt
- Freshly Ground Black Pepper
- 6 whole Pitted Black Olives (or You Can Substitute Pecans If You Don't Like Olives)
- 1 whole Lemon, For Squeezing
- Add fresh rucola and cherry tomatoes to a medium bowl.
- Cut the feta into cute, uneven chunks and toss them onto the array of healthy veggies.
- Combine olive oil, vinegar, sugar, salt, pepper, and pitted black olives in a bowl. Whisk together until combined. Taste and adjust seasonings.
- Pour dressing over salad ingredients. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top.
