Chocolate Swivel Cookies

  1. In a bowl, cream sugar and butter together until they are light and fluffy. Add in the egg and beat well until it is incorporated. Next up, add the orange zest, the flour, and the baking powder and mix all the ingredients together until you get a very smooth and soft dough. Wrap it up in plastic paper and refrigerate for about 1 hour.
  2. An hour later, roll out the dough into a rectangular shape, covering it up on both sides with plastic wrap. Make it about 2 mm thick. Remove the wrap on top, grab the chocolate cream and spread it across the dough, leaving a couple of millimeters from the border. Then slowly roll it up. Cover it with plastic wrap and refrigerate for a couple of hours or for about 30 minutes in the freezer.
  3. When ready, cut it up into slices. Place each slice on parchment paper and bake at 180u0b0C (375u0b0F) for about 10- 12 minutes. Remove the cookies from the oven and let them cool down on a wire rack.
  4. The Valentine's idea: once you slice them up, using a heart shape cookie cutter, shape them like hearts and serve them to your loved one on Valentine's Day.
  5. Or if you are single, like me, just enjoy them for breakfast with a nice, warm cup of cappuccino or hot chocolate, because loving yourself is what really matters!
