Harvest Breakfast Scramble
- 3 slices Bacon
- 1/4 pounds Hot Breakfast Sausage (I Used Jimmy Dean Hot)
- 1 Sweet Potato, Peeled And Diced
- 1/4 Onion, grated
- Salt And Pepper, to taste
- 1 teaspoon Rosemary
- 2 Tablespoons Butter
- 1 Fuji Apple Cored And Diced
- 1 Granny Smith Apple Cored And Diced
- 1 teaspoon Cinnamon
- 1 pinch Nutmeg
- 4 ounces, weight Dried Bing Cherries, Chopped
- 6 Large Eggs
- 2 ounces, weight Cranberry Cinnamon Goat Cheese
- Dice bacon and fry it in a skillet over medium heat. Remove bacon from skillet and add sausage into the skillet. Brown sausage and then remove it from the pan.
- Keep enough fat in the pan to cook the sweet potato. Add the diced sweet potato, grated onion, salt, pepper and rosemary. Cook until potato is tender.
- In another skillet melt the butter. Add the diced apples, cinnamon and nutmeg. Cook over medium heat until apples soften and start to caramelize. Add cherries and cook for a couple of minutes.
- Add the bacon and sausage back into the pan with the sweet potatoes and mix together. Then add the apple mixture into the skillet with the sweet potato. Mix together.
- Whisk eggs in a bowl and add them to the skillet. Cook and stir the mixture until eggs are cooked. Add goat cheese, stir until cheese is melted and evenly distributed (about 1 minute).
- Plate, serve and enjoy.
