Chocolate Dulce De Leche Cupcakes
- FOR THE CUPCAKES:
- 4 Tablespoons Butter
- 1/2 cups Whole Wheat Pastry Flour
- 1/2 teaspoons Baking Powder
- 1 Tablespoon Cocoa Powder
- 1/4 cups Sugar
- 1 pinch Salt
- 1 Tablespoon Chia Seeds
- 1/4 cups Water
- 4 Tablespoons Almond Milk
- FOR THE FROSTING:
- 4 Tablespoons Butter
- 1 cup Confectioners Sugar
- 6 Tablespoons Dulce De Leche
- 2 drops Milk
- For the cupcakes :
- Preheat the oven to 375 F. Put 6 paper liners into a cupcake pan. Set aside.
- Into your mixing bowl add the butter, flour, baking powder, cocoa, sugar and salt. Mix with the paddle attachment until the mixture resembles fine breadcrumbs.
- In a small bowl mix the chia seeds with the water and let it sit for a few minutes. Shortly, it will become a gel. Add the gel to the dry ingredients and mix. Slowly add the milk.
- Spoon the batter into the prepared baking cups. Bake for about 18-20 minutes. Remove from the oven and set aside to cool.
- Dulce de Leche Frosting
- Put the butter, sugar and dulce de leche into a mixing bowl. With the paddle attachment, mix them on low speed until incorporated. Increase the speed and mix for further 2-3 minutes. Add few drops of milk if needed until you reach your desired frosting consistency.
- Frost the cupcakes when completely cooled!
