  1. Preheat oven to 375u0b0.
  2. Lightly grease 9 x9 x2-inch baking dish or pan.
  3. Combine dried fruits and water in small saucepan.
  4. Bring to boil; lower heat and simmer, stirring occasionally until water is absorbed, about 5 minutes.
  5. Let cool.
  6. Stir lemon rind and juice and walnuts into apricot mixture.
  7. Combine flour, soda, salt, oats and brown sugar in large bowl.
  8. Stir in melted butter; mixture will be crumbly.
  9. Reserve 1 cup crumb mixture.
  10. Pat remainder evenly over bottom of prepared pan.
  11. Spoon apricot mixture evenly over crumb base.
  12. Sprinkle with reserved crumb mixture.
  13. Press lightly.
  14. Bake 25 minutes.
  15. Remove to cool on rack.
  16. Wrap in waxed paper or foil pockets.
  17. Refrigerate to make ready to travel or send in college Care packages.
