Breakfast Stuffing Scramble
- 1 dash Olive Oil
- 1 package (6-8 Oz. Package) Fresh Mushrooms, Chopped
- 1 clove Garlic, Minced
- 6 whole Eggs
- 1 cup Milk
- 2 Tablespoons Mayonnaise
- 1 box (6 Oz. Box) Stuffing
- 1 whole Tomato, Chopped
- 1 bunch Green Onion, Chopped
- 1/2 cups Cheese, Shredded (or Crumbled Goat/feta/blue)
- Salt And Pepper, to taste
- Garlic Powder, To Taste
- 1) Preheat oven to 350 F.
- 2) Saute garlic and mushrooms with oil in a skillet over medium heat for 2-4 minutes or until tender. Set aside.
- 3) Beat eggs, milk and mayo in a large bowl until well blended. Season with salt, pepper and garlic powder. Add stuffing mix.
- 4) Spoon stuffing/egg mix into a glass baking dish. Top with mushrooms, tomatoes and onions; blend.
- 5) Bake for 30 minutes, remove, sprinkle with cheese, and bake for another 10-15 minutes or until cheese is melted and center is "firm" or set. Remove and let stand for 10 minutes before serving warm.
