Apple Rolls

  1. Grease 2 one pound coffee cans (or 4 No. 2 cans).
  2. In medium bowl, mix apples, nuts and sugar.
  3. Let stand 1 hour, stirring to let juice appear.
  4. In large bowl, mix flour, soda, salt and spices.
  5. Add apple mixture, butter and vanilla.
  6. Stir in eggs. Fill cans 2/3 full.
  7. Bake in a 325u0b0 oven until tester comes out clean.
  8. Place cans on wire rack to cool for 10 to 15 minutes. Turn out onto wire rack to cool.
  9. Serve warm as cake, or cold as a tea bread.
