Healthy Chocolate Chip Cookies

  1. Preheat the oven to 350u0b0F. Line 1 baking sheet with parchment paper or a silicone mat. Set aside until needed.
  2. In a medium bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt. Add the olive oil, almond milk, and vanilla; stir to combine. Fold in the chocolate chips.
  3. Using a cookie scoop, scoop tablespoonfuls of dough into your hands and then shape the dough ball into a flat disk, about 1/4-inch thick. Place the cookies on the prepared baking sheet.
  4. Bake the cookies for 5 minutes and then, using a flat spatula, press down the cookies to flatten them. Bake for another 2 minutes and then remove from the oven.
  5. Allow the cookies cool on the baking sheet until warm or at room temperature. Serve and enjoy!
  6. These cookies last up to 5 days in a sealed container.
