Stuffed Acorn Squash
- 2 small acorn squash (about 1 lb. each)
- 1 lb. ground beef
- 2 c. chopped unpared tart all-purpose apples (about 2 medium)
- 1/4 c. raisins
- 1/4 tsp. salt
- 1/2 tsp. ground nutmeg
- 4 tsp. sugar
- 2 Tbsp. margarine or butter, melted
- Prepare and microwave squash as directed.
- Crumble ground beef into 2-quart casserole.
- Cover loosely and microwave on High 5 to 6 minutes, breaking up and stirring after 3 minutes, until no longer pink; drain.
- Stir in apple, raisins, salt and nutmeg.
- Remove stems and cut thin slice from pointed ends of squash, if necessary, to prevent tipping.
- Scoop squash from rind, leaving 1/4-inch thick shell.
- Stir squash into beef mixture; spoon into shells.
- Sprinkle 1 teaspoon sugar over mixture in each shell; drizzle with margarine.
- Cover loosely and microwave on High 7 to 9 minutes or until hot.
- Uncover and let stand 3 minutes.
