Healthy Everything Muffins With Honey Cinnamon Butter
- FOR THE MUFFINS:
- 1-1/2 cup Unbleached White Flour
- 3/4 cups Flax Meal
- 3/4 cups Quick Oats
- 1 cup Brown Sugar Or Turbinado Sugar
- 2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 2 teaspoons Ground Cinnamon
- 1/2 cups Raisins
- 2 whole Apples, Peeled And Shredded
- 1 cup Chopped Nuts
- 1-1/2 cup Finely Shredded Carrots
- 3/4 cups Milk
- 2 whole Eggs, Beaten
- 1 teaspoon Vanilla

- FOR THE BUTTER:
- 1 cup Butter, Softened
- 1/2 cups Honey
- 3 teaspoons Ground Cinnamon
- In a large bowl add the flour (I sometimes add part pastry wheat or other flour) and flax meal (I have golden flax seeds and grind them into meal in my vita-mix). Add the quick-oats, sugar, baking soda, baking powder, salt and cinnamon.
- In a separate bowl combine the raisins, apples, chopped nuts and carrots. If you have a food processor it works great to finely chop the apples, nuts and carrots. Mix into the dry ingredients.
- In another bowl mix together the milk, eggs and vanilla. Pour into the bowl with all of the other ingredients and stir together just until mixed. Do not overmix! Fill greased muffin pans three-fourths full. I like to sprinkle a nice amount of raw turbinado sugar on top.
- Bake 350 degrees for 20-25 minutes. Makes 15 muffins.
- For the Honey Butter, just mix everthing together and spread generously over warm muffins. Enjoy!
