Grilled Chicken Caesar Salad
- FOR THE DRESSING:
- 3/4 cups Buttermilk
- 2 Tablespoons Cider Vinegar
- 1 clove Garlic, Minced
- 1 whole Achovy Fillet
- 1 teaspoon Coarse Ground Black Pepper
- 1/2 cups Grated Parmesan Cheese

- FOR THE SALAD:
- 1 head Romaine Lettuce
- 1/2 cups Grape Or Cherry Tomatoes, Sliced
- 1/4 cups Grated Parmesan Cheese
- 2 whole Chicken Breasts, Grilled And Sliced
- To make the dressing, pour buttermilk, vinegar, garlic, anchovies, pepper and cheese into a blender and mix well. Pour into a container and chill in the refrigerator for about an hour.
- Tear the lettuce into bite-sized pieces and place on four plates. Top with tomatoes, cheese and grilled chicken. Serve with the dressing.
- Serves 4.
