Bourbon Vanilla Russian Bird’S Milk Candy (Aka Ptichye Moloko)
- 1-1/2 ounces, weight Agar Powder
- 1 cup, 2-2/3 teaspoons, 7/8 pinches Water
- 1/2 pounds, 2-5/8 ounces, weight Sugar
- 3/4 ounces, weight Bourbon Vanilla Sugar
- 1 Tablespoon Lemon Juice
- 4 whole Egg Whites (chilled)
- 1 pinch Baking Powder
- 1/2 pounds, 7/8 ounces, weight Unsalted Butter, Softened
- 1/2 pounds, 2-5/8 ounces, weight Sweetened, Condensed Milk
- 3 boxes 5"x7" Gift Boxes
- 1-3/4 pounds, 1/4 ounces, weight White Candy Melts
- 45 pieces Your Favorite Nuts
- 1) Combine agar powder with 250 ml water in a little pot, bring to boil and let simmer for about 3 minutes.
- 2) Reduce the heat to a simmer, then add the sugar, vanilla sugar and lemon juice to the mixture and stir until all the sugar is dissolved. Remove from heat and set aside.
- 3) Beat the egg whites with a hand mixer until foamy, then add a bit baking powder and continue beating the eggs until stiff. Set aside.
- 4) In another bowl, cream together the butter with the sweetened condensed milk using a hand mixer.
- 5) Next, carefully fold the butter cream into the beaten egg whites with a rubber spatula.
- 6) After that also fold in your agar mixture. Let everything set for about 5 minutes.
- 7) Meanwhile, line your gift boxes with some little plastic bags.
- 8 ) Now, take your souffle mixture and divide it evenly into the 3 boxes and smooth the top.
- 9) Put the boxes in the fridge and let set overnight or for at least 6 hours.
- 10) The next day, flip the souffle onto a wooden bread board and cut each souffle into 15 squares.
- 11) Melt the candy melts in a double boiler or in microwave (heat for 30 second increments, stirring between each, and stopping as soon as the chocolate is melted) and dip your squares into the mixture.
- 12) Place squares on a baking sheet lined with parchment paper, add your favorite topping (a nut or something else) while it is still wet and allow to dry.
- 13) Keep in refrigerator.
