Homemade Nutty Paddle Pops
- 1/2 gallons Ice Cream
- 4 pieces Popsicle (sticks)
- 1-1/4 cup Semi-Sweet Chocolate Chips
- 1/2 cups Coconut Oil
- 1 bag (12 Oz. Size) Good Life Granola, For Topping
- Have a small pan lined with wax paper ready and a sharp knife standing by.
- Open your 1/2 gallon of ice cream and slice 2 1-inch sections from your square of ice cream, transfer to your wax paper covered pan and slice each slab in half. You now have 4 "paddles."
- Insert your popsicle sticks in the bottom of each paddle and place in the freezer to harden up for about 20 minutes.
- In a small sauce pan, melt chocolate chips and coconut oil and set aside to cool down to room temperature.
- When the paddles are frozen, take them out of the freezer and scoop your cooled chocolate shell over, topping with granola. Place back in the freezer for 3 to 5 minutes for the shell to harden and then devour!
