Cranberry Cheese Bars
- 2 c. unsifted flour
- 1 1/2 c. rolled oats
- 3/4 c. plus 1 Tbsp. brown sugar, firmly packed
- 1 c. margarine or butter, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (14 oz.) can sweetened condensed milk
- 1/2 c. lemon concentrate juice
- 2 Tbsp. cornstarch
- 1 (16 oz.) can whole berry cranberry sauce
- In a large bowl, combine flour, oats, 3/4 cup sugar and margarine; mix until crumbly.
- Reserving 1 1/2 cups crumb mixture, press remainder on bottom of greased 13 x 9-inch baking pan.
- Bake at 350u0b0 for 15 minutes.
- Meanwhile, in a small bowl, beat cheese until fluffy; gradually beat in milk until smooth.
- Stir in lemon juice; spread evenly over prepared crust.
- Combine remaining 1 tablespoon sugar and cornstarch; stir in cranberry sauce.
- Spoon evenly over cheese layer; top with crumb mixture.
- Bake an additional 40 minutes.
- Cool and chill.
