Disappearing Oatmeal Cookies
- 1 cup Butter
- 1 cup Brown Sugar
- 1/2 cups Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 3 cups Oats
- Preheat oven to 350u0b0F.
- Soften the butter and blend with both sugars until smooth. Add the eggs and the vanilla. Mix well. Add the rest of the ingredients and mix well. If using raisins, chocolate chips, nuts, etc. add them at this point and mix well. Portion and bake for about 10 minutes or until the edges begin to brown. Allow to cool on the cookie sheet for one minute.
- Dessert option: when cooled, use two cookies and as much vanilla ice cream as you wish to make ice cream sandwiches. Eat immediately or wrap individually and freeze for later. They maintain their softness so they can eaten right out of the freezer.
