Flourless Chocolate Cake For Two
- 3-1/2 ounces, weight Semisweet Chocolate
- 7 Tablespoons Butter
- 2 Eggs, Separated
- 1/2 cups Granulated Sugar, Divided
- Preheat oven to 350u0b0F. Grease a 6-inch cake pan and line with parchment paper.
- Melt the chocolate and butter together, stirring until smooth and well-combined (takes about 1 minute in the microwave, 30 seconds at a time, stirring after each time.).
- In another bowl, beat the egg yolks with 1/4 cup of sugar until well-combined. Slowly add the chocolate mixture, being careful to temper the eggs (nobody likes scrambled eggs in the cake!).
- Wash the chocolate bowl out, dry it and use it for the next step, which is to beat the egg whites with the remaining 1/4 cup of sugar. Beat until glossy, stiff peaks form. Fold the stiff, glossy egg whites into the chocolate mixture.
- Scrape the batter into your prepared pan, and bake for about 35 minutes or until a wooden toothpick inserted into the center of the cake comes out clean. Makes 4 hearty little slices, or 6 petite ones. Top with whipped cream, berries, or whatever makes you happiest!
