Flourless Chocolate Cake For Two

  1. Preheat oven to 350u0b0F. Grease a 6-inch cake pan and line with parchment paper.
  2. Melt the chocolate and butter together, stirring until smooth and well-combined (takes about 1 minute in the microwave, 30 seconds at a time, stirring after each time.).
  3. In another bowl, beat the egg yolks with 1/4 cup of sugar until well-combined. Slowly add the chocolate mixture, being careful to temper the eggs (nobody likes scrambled eggs in the cake!).
  4. Wash the chocolate bowl out, dry it and use it for the next step, which is to beat the egg whites with the remaining 1/4 cup of sugar. Beat until glossy, stiff peaks form. Fold the stiff, glossy egg whites into the chocolate mixture.
  5. Scrape the batter into your prepared pan, and bake for about 35 minutes or until a wooden toothpick inserted into the center of the cake comes out clean. Makes 4 hearty little slices, or 6 petite ones. Top with whipped cream, berries, or whatever makes you happiest!
