Easy Cilantro Lime Rice
- 4 whole Limes, Divided
- 3 cups Water
- 3 cups Minute/instant Rice
- 1/4 cups Chopped Cilantro
- 2 Tablespoons Peanut Oil
- 1/2 teaspoons White Sugar
- 1/4 teaspoons Salt
- Zest 2 of the limes, add half of the zest to the water you are going to cook the rice in and reserve the other half. Juice 1 lime and also add to the water for the rice. Cook rice according to directions on the package.
- In a mini food processor, pulse cilantro leaves, oil (you don't have to but I find a little helps), juice from the other 3 limes, lime zest, sugar and salt (you can also do this in a mortar and pestle and it will impress the heck out of your guests) into a fine mixture. Pour over the rice and stir well.
- If you want to make this spicier, you can add chopped green chilis and black pepper to taste.
- This goes great in a burrito or salad with the barbacoa recipe, some garlic black beans, sauce and cheese.
