Orange Honey Muffins
- FOR THE MUFFINS:
- 1/2 cups Flour
- 1/4 teaspoons Cinnamon
- 1 pinch Nutmeg
- 1 pinch Ground Cloves
- 6 Tablespoons Butter, Softened
- 1/2 cups Sugar
- 1 Tablespoon Honey
- 1 whole Orange (Juice And Rind Finely Grated, Divided Use)
- 2 whole Eggs, Lightly Beaten
- 3/4 cups Walnuts, Finely Chopped

- FOR THE TOPPING:
- 1/8 cups Walnuts, Chopped Finely
- 1/4 teaspoons Cinnamon
- 2 Tablespoons Honey
- Directions:
- Preheat oven to 375 degrees. Place 12 cupcake liners in a muffin pan.
- Sift flour, and spices and set aside. Cream butter and sugar in a separate bowl until light and fluffy. Beat in honey and orange rind (reserve the orange juice for later), then gradually add eggs, beating well after each addition. Fold in dry ingredients. Stir in walnuts.
- Divide batter into liners. Bake for about 20 minutes or until a toothpick inserted in the center of the muffin, comes out clean.
- For the topping, mix together walnuts and cinnamon, set aside. Combine honey and orange juice in a saucepan, heat gently, stirring until combined.
- When the muffins have almost cooled, prick the tops all over with a fork and then drizzle with the warm honey/orange mixture. Sprinkle with walnut mixture.
- Note: I only got 8 out of 1 batch, although with all the baking I do, 8 was really a good number. You can easily double the recipe to fit the size of your family.
