Vegetables With Pasta
- 1 medium yellow squash
- 1 medium zucchini
- 1 medium sweet red pepper
- 1 1/2 c. sliced fresh mushrooms
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 6 oz. linguini
- 1/4 c. dry white wine
- 1/4 tsp. salt
- 1/4 tsp. basil
- 1/4 tsp. tarragon
- 1/4 tsp. red pepper flakes
- 1/4 c. grated Parmesan cheese
- Cook linguini per package directions.
- Cut squash and zucchini into 1/4-inch thick slices; then cut slices into thin strips (leave peel on).
- Cut red pepper into thin strips.
- Stir-fry vegetables in olive oil with garlic for 2 to 3 minutes.
- Mix with cooked linguini, wine, salt, basil, tarragon and red pepper.
- Top with grated Parmesan cheese and serve.
