Paleo Banana & Blueberry Muffins

  1. Preheat oven to 180u0b0C (355u0b0F) and fill a muffin tray with muffin cases.
  2. Mix dry ingredients together in a bowl.
  3. In another bowl, mash ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.
  4. Combine dry ingredients with wet ingredients and continue to mix for a few minutes, until all ingredients are well blended. Fold in blueberries (reserve a handful to garnish afterwards).
  5. Pour mixture into individual muffin cases. Place the muffin tray into the oven for approximately 20 minutes or until a knife inserted in the middle of one of the muffins comes out clear.
  6. Garnish with the almond flakes and remaining blueberries and enjoy!
