Paleo Banana & Blueberry Muffins
- 1 cup Almond Flour
- 1 cup Coconut Flour
- 6 Tablespoons Arrowroot Powder
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 3 whole Ripe Bananas
- 1/4 cups Coconut Oil
- 1/4 cups Honey Or Syrup
- 2 whole Eggs
- 2 teaspoons Vanilla Bean Paste
- 1 cup Blueberries
- Sliced Or Slivered Almonds, For Garnish
- Preheat oven to 180u0b0C (355u0b0F) and fill a muffin tray with muffin cases.
- Mix dry ingredients together in a bowl.
- In another bowl, mash ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.
- Combine dry ingredients with wet ingredients and continue to mix for a few minutes, until all ingredients are well blended. Fold in blueberries (reserve a handful to garnish afterwards).
- Pour mixture into individual muffin cases. Place the muffin tray into the oven for approximately 20 minutes or until a knife inserted in the middle of one of the muffins comes out clear.
- Garnish with the almond flakes and remaining blueberries and enjoy!
