Apricot Sponge Roll
- 1 c. sifted flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 3 large eggs
- 1 c. sugar
- 1 tsp. vanilla
- 1/3 c. water
- 3/4 tsp. instant coffee
- 5 tsp. hot water
- 1/4 c. margarine, softened
- 2 c. sifted confectioners sugar
- 1/4 tsp. vanilla
- 1/3 c. apricot preserves
- 1/4 c. chopped nuts (optional)
- Preheat oven to 350u0b0.
- Grease 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
- Line with wax paper and grease again.
- Sift together first 3 ingredients; set aside.
- In small bowl, beat eggs, sugar and vanilla on high speed until thick, about 5 minutes.
- At low speed, blend in water, then dry ingredients all at once.
- Pour batter in pan.
- Bake 14 minutes or until top springs back when touched.
- Turn out cake on confectioners sugar dusted towel.
- Roll up in towel.
- Cool.
