Chocolate Fluffernutter Cookies

  1. Preheat oven to 350u0b0F. Line three baking sheets with parchment paper or Silpat liners.
  2. In a mixer, cream together sugar, shortening, vanilla and egg.
  3. In a small bowl, combine dry ingredients and sift together.
  4. Add dry ingredients to the creamed mixture, alternating with buttermilk. Mix until completely combined, stopping to scrape the sides if necessary. Stir in Nestle morsels.
  5. Drop by tablespoonfuls onto the lined sheets. Bake for 8 minutes and remove from the oven. Top each cookie with a marshmallow half, return to the oven for three minutes longer. When cookies are done, let cool on the sheet for one minute before removing to racks to cool completely.
  6. When using a measured tablespoon scoop, this recipe makes exactly 3 dozen cookies.
