Herbed Potatoes & Green Beans

  1. 1. Take a large skillet with a lid and spray surface with cooking spray. Turn heat to medium and add potatoes. Flip after 5 minutes and brown the other side.
  2. 2. Pour in about half the chicken broth or until potatoes are about half-covered with broth. Cover and allow to steam over medium/low heat 5-10 minutes until liquid is almost absorbed.
  3. 3. Add the remaining broth or halfway up potatoes again. Add green beans, minced onion, garlic powder, onion powder and paprika. Stir. Replace lid and allow to steam 5-10 minutes. Once veggies are cooked through, turn up heat and reduce broth. As it thickens, stir to coat the veggies.
  4. 4. Season with salt and pepper. Top with diced green onions (I of course skipped this step!).
