Orzo And Chard Soup
- 8 cups Vegetable Or Chicken Broth
- 6 cloves Garlic, Minced Or Pressed
- 1 teaspoon Red Chili Flakes
- 1 Tablespoon Olive Oil
- 1 cup Orzo, Plain Or Flavored
- 6 cups Chopped Swiss Chard Leaves Or Spinach
- 1 whole Lemon
- 1 cup Parmesan Cheese
- 6 dashes Red Chili Garlic Sauce
- In a large pot, saute the garlic and hot pepper flakes (if using) in olive oil until garlic is just starting to brown. Add broth and bring to a boil. Add orzo; simmer until it is just done (check the directions on the package). Add greens and simmer for 2 minutes more.
- Remove from heat and stir in the juice of half a lemon; slice the other half into 6 thin rings and set aside. To serve, divide soup among 6 bowls, sprinkle each bowl with Parmesan cheese and place a lemon ring to one side. Drizzle a little chili sauce over part of the lemon ring and serve.
