Eggnog Muffins
- 2 cups All-purpose Flour
- 1/2 cups Sugar
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 3/4 teaspoons Ground Nutmeg
- 1/2 teaspoons Ground Cinnamon
- 1-1/2 cup Eggnog
- 1/3 cups Melted Butter
- 1 Egg, Beaten
- 1 teaspoon Pure Vanilla Extract
- Cinnamon-sugar, For Sprinkling
- Preheat oven to 400 F. Grease 12 regular muffin cups.
- Place flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large mixing bowl and whisk together well. Set aside.
- In a small mixing bowl, whisk together the eggnog, butter, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until the dry ingredients are moistened. Do not overmix. Spoon the batter into prepared muffin cups and sprinkle cinnamon-sugar over the top of each.
- Bake in the preheated oven for 16-20 minutes, or until a toothpick inserted into the center comes out clean.
- You could add raisins/golden raisins, dried cranberries, chopped toasted pecans, oats, or white chocolate chips.
