Chocolate Granola Cookies
- 1/2 cups Butter, Softened
- 3/4 cups Sucanat (brown Sugar)
- 1 whole Egg
- 1 teaspoon Vanilla
- 1 cup White Wheat Flour
- 1 cup Rolled Oats
- 2 Tablespoons Cocoa Powder
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/2 cups Raisins
- 1/2 cups Chopped Peanuts
- 1/2 cups Chocolate Chips
- In a large mixing bowl, combine softened butter and sucanat. Add egg and vanilla. Beat until creamy - about 2 minutes. Add flour, oats, cocoa powder, baking powder, and baking soda. Mix only until combined. Dough will be stiff. Stir in raisins, nuts, and chocolate chips.
- Drop by tablespoons onto parchment paper lined cookie sheets. Bake at 375F for 8-9 minutes. Remove from oven and smush each cookie down with a fork. Let cool 1 minute on cookie sheets. Transfer to wire racks to cool completely. Makes about 2 dozen.
