Spaghetti Sauce – Using Fresh Tomatoes
- 1/4 cups Olive Oil
- 2 whole Medium Onions (or 1 Large), Chopped
- 1/4 cups Fresh Basil, Chopped
- 4 cloves Garlic (or More To Taste), Chopped
- 1 teaspoon Salt
- 4 pounds Fresh Tomatoes, Peeled And Chopped
- 4 sprigs Parsley (optional)
- 1 Tablespoon Sugar (optional)
- 1. Heat olive oil over medium heat in a large iron skillet or heavy saucepan.
- 2. Add onion, basil, garlic and salt.
- 3. Saute until onion is tender, approximately 5 minutes.
- 4. Add tomatoes, parsley and sugar.
- 5. Reheat to a boil; reduce heat and simmer uncovered for about 2 hours, stirring often or until sauce has thickened.
- 6. Remove parsley.
- 7. Serve over cooked spaghetti or other Italian pasta, or freeze for later use.
