Berries And Cream Oatmeal With Steel-Cut Oats

  1. Prepare the steel-cut oats:
  2. In a 2-quart saucepan, bring the 4 cups of almond milk or water to a low boil. Add the 1 cup of steel-cuts oats and salt, and cook according to package instructions. Then cool to room temperature (about 1 hour). Store in the refrigerator or freezer and reheat as needed.
  3. Personal notes: I used the largest pot I had to bring the almond milk to a boil. It is very foamy and you must stay with it, even if you cover it and let it simmer for 10 minutes. I also doubled the recipe, so that I didn't have to keep remaking the oats it for the week. So ... every morning I have oatmeal ready to add berries to it, or peaches if you like.
  4. The above amount of oats makes four 1-cup servings.
  5. 180 calories, 7 g protein, 29 g carbohydrates (0 g sugars), 6 g fat
  6. Prepare your oatmeal:
  7. Combine 1 cup of pre-cooked oatmeal, almonds, vanilla, almond milk, and sweetener in a cereal bowl and stir well. Place berries over the top. Microwave for 1 to 2 minutes.
  8. Personal note: I don't use the sweetener, this is very sweet already.
