Supper Omelet(Micro Magic)

  1. Shred potatoes, rinse thoroughly and drain well, then mix with onion in a micro-safe 9-inch pie plate.
  2. Cover with wax paper and microwave on High 6 to 7 minutes, stirring once, until potatoes are tender.
  3. Combine eggs, milk, salt and pepper; beat well.
  4. Now add green pepper and tomato and pour all over the potatoes.
  5. Mix lightly, cover with wax paper and microwave on High for 2 minutes. Stir to move cooked edges to the center.
  6. Cover and microwave on High 2 to 3 minutes until center is almost set, rotating dish once and sprinkling cheese at rotation time.
  7. Let stand a few minutes. Cut into wedges, serve and enjoy.
